Brown Sugar Toffee Cookies
2 1/4 cups flour
2 teaspoons baking soda
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 teaspoon cinnamon
3/4 cup butter, softened
1 1/4 cups dark brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup crushed toffee bits
1/2 cup coarse brown sugar for rolling
Directions
Preheat oven to 350 degrees. Prepare baking sheets with parchment paper or baking sheets. In a mixing bowl, whisk the dry ingredients together: flour, baking soda, cornstarch, salt and cinnamon. In another mixing bowl, cream butter and sugar together until creamy, about two minutes. Add egg and vanilla and mix until well combined. Slowly add the dry ingredients, followed by the toffee bits. Scoop generous tablespoon balls of dough and roll into a ball, then roll in the coarse sugar. Place 12 cookies per sheet and bake for 10 minutes, or until tops are crackled. Remove and cool for a couple of minutes before transferring to a cooling rack.
